Burren Smokehouse and Visitor Centre

Connemara Smokehouse and Visitor Centre

Goatsbridge Trout Farm

Mags and Ger Kirwan are the custodians of a terrific heritage. Their Goatsbridge Trout Farm is located on the River Little Arrigle, which has been fished intermittently since the twelfth century! Today, their premium product is on the menus in many of the greatest Irish restaurants and their hot smoked trout is among the favourite staples on Irish dinner tables. We visit this passionate duo at the farm outside Thomastown in Kilkenny and are enthralled by their knowledge, enthusiasm and connection to the land on which they live and work. The Kirwans are fiercely passionate and determined operators, they know the value of the provenance of their product and are fully immersed in the history and hard work that is their heritage and that is why there are members of Good Food Ireland.

McConnells Gourmet Smoked Foods

McConnell’s Fish Shop was previously located on Dublin’s Grafton Street, but due to high rents moved to its present location in 1995. Wrights of Howth - Howth

14 West Pier, Howth, Co Dublin

In 1893 the Wright family began smoking Irish Salmon. The craft has been passed down through the generations and little has changed. We still fillet the fish by hand and cure using only natural sea salt. We then smoke each fish for eight hours using pure oak chippings which give our product its world renowned flavour. This year, due to conservation of our Wild Salmon stocks, Wrights of Howth have now moved to producing Organic Irish Smoked Salmon, for which we won the Gold Great Taste Award 2009.
