Pie are Us!


Simple Simon met a pieman, going to the Fair. Says Simple Simon to the pieman, Let me taste your ware…An old nursery rhyme inspires us today to write about pies! Not just any old pies. Barry Liscombe’s pies,  to be exact. The Head Chef at Harte’s bar and Grill in Kildare,  does a neat line in pies this time of year.  The Pie of the Day could include Bacon and Cabbage Pie, Corned Beef and Mustard Pie, or a luxury creamy Fish Pie. All come topped with fluffy mashed potatoes. Sometimes Barry adds a little West Cork chorizo to the potatoes for the meat pie toppings. He might throw in a few herbs for the fish ones. There’ll always be butter and milk mashed into the spuds, which makes them taste like a dream to start with. Baked golden on the  top – are you salivating already? Barry’s pies have become famous at Harte’s. The farmers around Kildare town love them. Not surprising, because they represent great value eating at lunchtime and very sustaining before an afternoon in the fields. Local food for local people. At it’s best at Harte’s. Barry is always open to suggestions for fillings. Any favourites out there?
