What You’ll Do
A warm welcome awaits from Master Smoker Anthony who will guide you through his smokehouse and introduce you to the wonderful world of Irish salmon. Anthony will show you how he cures the salmon using the wet curing process that his father taught him many years ago and you’ll also discover how oak sawdust creates a smooth flavour. Afterwards, you can enjoy a delicious tasting of smoked salmon and Anthony’s other smoked foods. This is a very personalised experience and you’ll uncover glimpses of the unique smoking recipe that sets Anthony’s products apart and understand why they are much sought after from loyal customers around the world.

About Our Member
Anthony Creswell’s award-winning Ummera Smokehouse in rural West Cork, by the banks of the Argideen River, is a leading light in artisan food production and environmentally friendly practices.
This second-generation artisan, who took over the smokehouse his father Keith started in the 1970s, has strived to develop the original fish smoking business. Today the smoking methods remain unchanged but almost 50 years on, Anthony has an enviable reputation for producing some of the finest smoked Irish salmon that the country has to offer. Having developed a new purpose-built smokehouse and achieved Organic Trust certification, Anthony now also smokes other food products including, chicken, duck, beef and dry-cured bacon. You will meet with Master Smoker, Anthony, hear his story and learn about the artful skill of smoking and see why Irish smoked salmon is so famous all over the world.
