How do you like the look of this fish dish? A piece of Burren Smokehouse hot smoked organic Irish salmon, served on a pile of fluffy mash with spring onions, local wilted greens and a cream sauce. An absolutely stunning combination, as served in  The Roadside Tavern in Lisdoonvarna village, Co. Clare. The Roadside is owned by Peter and Birgitta Curtin of Burren Smokehouse,  just down the road. This writer remembers the very first visit to this trad pub several years ago, where Birgitta disappeared into the kitchen to create this lovely smokehouse fish dish for lunch.  It was great then, and it’s still great today! Now cooked by chefs at Kieran’s Kitchen at The Roadside Tavern, where Kieran O’Halloran and his team use local Clare produce to create a fine selection of pub food. And in keeping with the romantic reputation of Lisdoonvarna, who should walk in the door while we were enjoying this magnificent offering, only actor Gabriel Byrne and his beautiful new wife. The couple are enjoying their honeymoon in Ireland, and paid a surprise visit to The Roadside, to enjoy a plate of Burren  Smokehouse Smoked Salmon. What better place to celebrate a love match than in the village of matchmaking, in this cosy traditional Irish pub, where good food is the way to a man’s (and woman’s) heart…
