SMOKIN’ SALAD


Wexford’s Kilmore Quay fishing port provides lots of fresh fish caught off the east coast of Ireland. Summer shoals of mackerel are plentiful in these waters. The Kitchen@Gorey, in Gorey town, Co. Wexford, have used smoked mackerel from Kilmore Quay in a lovely salad with Wexford new potatoes. Here is the recipe for you to recreate at home. Serve this for lunch or as a light supper dish. It’s tasty and good for you, since mackerel are oily fish which contain lots of Omega 3’s for heart health and good joint movement.
