THE SWEET LIFE


Here is Roberto Pons clutching a bunch of vibrant mixed herbs, delivered to him by a friendly neighbour. Freshly picked from the garden, for a chef whose Italian cuisine is well known at La Dolce Vita in Wexford Town. As every chef knows, quality core ingredients like good meat and fresh fish are enhanced even more with some herbaceous notes. We recently ate Roberto’s traditional Spaghetti Bolognaise. A hearty bowl pasta strands topped with tender steak mince,  slow cooked with tomatoes, garlic and herbs, and what a fine example of this famous Italian dish he creates.
