A TASTE OF SUMMER

It might not look much like summer today where you are.  More like November with the hot sweats out there! Despite the grey clouds, mist and fine rain, the warm muggy air tells us we are indeed in the middle of the Irish summer season.   Potato growers be warned, this is perfect weather for blight. On a brighter note, if we can’t bring summer to the great outdoors, we can certainly bring it to the table with some seasonal food. Try this easy and delicious recipe from Helen Finnegan of Knockdrinna and Lavistown cheeses. Frittata with summer vegetables and Lavistown cheese combines freshest eggs with seasonal veggie tastes and the creaminess of Helen’s handmade cheese. An easy one to solve your supper quandry this evening!
