Filo Triangles with Ardsallagh goats cheese and red onion
Cut the red onion into slices and fry in the butter with the garlic.When the onion and garlic are cooked add the wine and balsamic vinegar and reduce the liquor until it has almost all gone.Add the honey and season with salt and freshly ground black pepper and set aside.
Thinly roll the puff pastry and cut into small (or large) triangles.Top the pastry triangles with generous amounts of Ardsallagh goat’s cheese followed by the onion mixture.
Bake at 200°C for 10 minutes or until the pastry has cooked.
