Chunky Chickpea, Vegetable and Thyme Winter Weather Soup


A winter weather soup full of chickpeas and a full range of seasonal veg, with a little bit of a garlic and chili kick. This will keep you warm and nourished in the winter months.

There’s probably a hundred different versions of winter weather soup. This subtle blend of fresh seasonal veg, aromatic thyme and delicious chickpeas – is the just the thing you need to keep colds at bay and keep you going through the day. This is a good soup for lunch in winter, as it’s hearty and full of flavour. A good way to get a lot of nutritional impact in one bowl with everything from winter warming chilli to cold-fighting garlic included. This is a quick easy soup to make the night before, or throw together with left over bits of veg around the kitchen (you can always substitute things so that you use what you have.

Follow these quick and easy instructions:

1. To start this winter soup recipe, heat the oil in a pan and gently fry the onion, garlic, chlli, celery, squash, parsnip and carrot, till they’re all beginning to soften. It’s important not to let the mix burn or get caramelised, so you need to keep the heat low and stir occasionally. .  
2. Pour in the tomatoes and stock, add the thyme and seasoning and give it a good stir. Don’t lash on the seasoning here, as you will have plenty of time to season it to taste when the soup is ready.
3. Bring the pot to bubbling then simmer gently, covered, till the vegetables are almost tender.
4. Add the chickpeas to the mix and continue simmering till the vegetables are cooked through.
5. Check seasoning and correct to taste.
6. Serve with bread of your choice, we suggest a nice chunky homemade bread, but really anything will taste good.
