His ingredients search starts with picking seasonal vegetables and herbs –  fresh from the gardens of Source Sligo owners. Other produce is supplied by local growers, alongside outstanding butchers meats and fresh fish. The Source Sligo home bakery churns out loaves, scones and pastries. What more could a young man need to feed the crowds?!   The recent appointment of Fiona Hannon as day to day Manageress at Source Sligo, has compounded the wealth of skills, enthusiasm, passion and professionalism in this lively place of food.
