A simple and stunning seafood starter from Paul Flynn at The Tannery in Dungarvan, using the rich meaty flavours of black pudding, coupled with a refreshingly soft cream dressing and a tender bite of the scallop. The perfect starter to set the tone for a romantic evening.

PAN-FRIED MONKFISH WITH LEMON CONFIT SPINACH AND MUSHROOMS

Robbie Krawcyzk of Tankardstown House applies his light touch to the freshest monkfish for this main course, think of the light bite of fish, the earthy flavour of mushrooms and a sweet lemon sauce to savour long after the last bite.

LAMB SHANKS WITH ROAST VEGETABLES, SCALLION MASH AND ROSEMARY

Executive Chef Tim O’Sullivan from Renvyle House has devised this easy dish that just cooks itself while you soak up the attention of your paramour this weekend. Seasonal Irish flavours, fresh lamb and the delicious scent of roasting rosemary, this is the recipe to woo any meat lovers.
