This day marks the ancient festival of Imbolc, a time when the dark, dreary days of winter start giving way to the first stirrings of spring. And let’s be honest, in Ireland, that might just mean it’s raining slightly less.

Who Was St Brigid & Why Would She Have Made a Great Irish Mammy?

 

St Brigid was not just any saint—she was fiercely independent, a lover of hospitality, and a bit of a miracle worker when it came to food. She’d have made a brilliant Irish mammy, always making sure no one left the house hungry.

 

She was famous for her love of dairy, so much so that she’s said to have churned enough butter to feed a village (and if you’ve ever had proper Irish butter, you’ll know why that’s worth celebrating). She also had a knack for turning water into ale, proving that she truly was a saint after our own hearts.

While February might not be bursting with summer berries and fresh greens, it’s the perfect time to embrace the hearty, earthy flavours of winter produce. Here’s what’s at its best this month:

 

  • Spuds & Root Veg – Potatoes, parsnips, carrots, and turnips. The kind of veg that puts manners on a stew.
  • Cabbage & Kale – Perfect for colcannon, and guaranteed to keep the doctor (or at least the neighbours) happy.

  • Irish Dairy – Butter, cream, and cheeses so good they should come with a warning.
  • Oats & Barley – Because nothing beats a hearty porridge or a proper soda bread with lashings of butter.

A proper Irish soup should stand a spoon up straight, and this one—packed with parsnips, turnips, and a generous dollop of rich Irish cream—does just that. Best served with a chunky slice of soda bread, because we don’t do small portions here.

Ah, boxty. The humble spud pancake that’s crispy on the outside, fluffy on the inside, and the perfect excuse to eat more potatoes. Top it with smoked salmon and a dollop of crème fraîche, and you’ll be feeling very fancy altogether.
