SESSION 4: “Sustainability on the Plate: Linking Food, Human Health and Net Zero in Food Production”

The Good Food Ireland Conference taking place on Tuesday 25th March 2025 in Anantara The Marker Hotel Dublin will present a series of expert-led sessions and panel discussions. Attendees will gain actionable insights into creating authentic, sustainable and innovative food and drink tourism offerings that showcase Ireland’s rich culinary heritage and drive business growth.

 

One of the sessions “Sustainability on the Plate: Linking Food, Human Health and Net Zero in Food Production” kindly sponsored by AIB will be led by Prof John Gilliland, OBE DSc FRSA FRAgS, Brook Hall Estate, Derry.

 

John is a prominent and pioneering sustainable farmer and leader whose Brook Hall Estate is verified as “Beyond” Net Zero. As Professor of Practice in Agriculture and Sustainability at Queen’s University Belfast he chairs the ARC Zero carbon farming project and helped shape Northern Ireland’s £38m Soil Nutrient Health and LiDAR Scheme. A former Ulster Farmers Union President, he advises governments on climate, soil health and sustainability and has spoken at COP29 and global summits.

 

The session focuses on the interconnectedness of food sustainability, human health and the environmental impact of food production. It will explore how the food industry can evolve to meet the growing demand for sustainable practices while promoting human well-being. Key topics include reducing carbon emissions in food production, sourcing ingredients responsibly and transitioning toward regenerative agriculture to achieve net-zero emissions. It will explore new ways of incorporating sustainable practices into menus, supporting local producers and using ingredients that align with a healthier, more eco-conscious approach to food.
