Dating back to the early 1700s, the Granville is one of Ireland’s oldest hotels and has played a prominent role in Waterford city’s rich, social and political history. It was purchased in 1979 by Liam and Ann Cusack, who restored the property to its former gracious grandeur. The hotel now combines modern comfort with olde worlde charm and elegance.

Dining

The Bianconi Restaurant is named after Charles Bianconi who established a stage coach service from what is now known as the Granville Hotel. The restaurant today specialises in seasonal dishes which highlight the most terrific local produce found in the region. In this elegant dining room you can enjoy breakfast, dinner and Sunday Lunch – a very popular staple for Waterford locals to enjoy each week.

 

The Thomas Francis Meagher Bar, named after the gentleman who unveiled the Irish Tricolour who was born in the Granville Hotel, is an intimate and warm space. Here you can cosy up next to the open fire with a refreshing beverage from an extensive drinks menu and enjoy a more casual dining experience.

The Bianconi Restaurant specialises in seasonal dishes which highlisght the best of terrific local local produce. It’s a real showcase for all that is good in authentic Irish dining. The menu at The Bianconi is a vertiable treat for food lovers. You’ll find flavoursome starters such as Waterford Coasr Seafood Chowder along with house favourites such as the Homemade Potato anf Smoked Bacon Soup. Main course features popular dishes such as the Braised Waterford Lamb Shank, made famous for its appearance on RTE’s Neven’s Greenway Food Trails along with a tasty Potato Gnocchi with roasted pepper and tomato sauce. Finish off your meal with a homemade dessert and perhaps one of the Granville’s speciality coffees. A similar menu can also be enjoyed for lunch every Sunday.

 

The Granville’s award-winning breakfast is also served in the Bianconi Restaurant and showcases a wide variety of local foods. Start the day with the ‘Granville Porridge Experience’ with Flahavans Porridge (oats milled for 200 years by the Flahavan family located only 20km from the hotel) or why not jazz this up the Granville way add adding a dash of Irish Whiskey, Irish Bailey’s Cream or Waterford Muldoon (a toffee and hazelnut flavoured liqueur). The hot breakfast menu includes the Granville Eggs Benedict which features the famous Waterford Blaa. This soft, floury bread roll has been awarded Protected Geographical Indication (PGI), meaning it can only be produced in Waterford. For something sweet, savour some warm, freshly baked scones smothered in the hotel’s award-winning strawberry and raspberry jam.

Rooms & Facilities

The Granville Hotel was purchased by Liam & Ann Cusack in 1979 and their traditions of comfort, excellent service and hospitality are upheld by the second-generation Cusack’s and the Granville Hotel team. Rooms are luxuriously furnished and equipped with all you need for a comfortable stay including plenty of personal touches and amenities. Aside from the popular restaurant and bar, there are meeting rooms and stunning spaces for weddings, civil ceremonies and other celebrations.

The Victorian canopy at the entrance of the Granville Hotel leads into a bright welcoming lobby area where you’ll check-in with the friendly reception team who will tell you all you need to know about your stay in Waterford. Feel free to ask about local attractions and must-see places, the staff will be happy to share with you their local insider knowledge. The Granville Hotel has 98 guest bedrooms which are individually decorated with a traditional feel but with all the modern conveniences you need for a relaxed and enjoyable stay.

 

There is a choice of Double, Twin and Triple rooms which are dressed with fabrics and antiques to reflect the architecture and original interiors of this 18th-century manor style mansion. You can also upgrade to King Rooms and Balcony Rooms which come with additional comforts such as a Nespresso machine.

 

All rooms are ensuite with bath/shower and have indulgent toiletries and soft, fluffy towels. Rooms come with a flat-screen TV, telephone, high powered hairdryer, free WIFI, along with tea and coffee-making facilities and a 24-hour room service menu. Rooms with air conditioning are subject to availability upon request.

 


Sustainability

The Granville Hotel specialises in seasonal dishes which highlight Irish produce. To keep food miles low, local suppliers are used as much as possible, particularly those with sustainable business practices. The hotel is currently undertaking a sustainable journey to improve their carbon footprint.

 

Since starting they have achieved numerous feats such as bulk toiletries in guest bedrooms, all LED lights and sensor lights in back-of-house areas, meanwhile smart flow metres monitor water usage and consumption. Also in place are correct water disposal procedures which are monitored in each department. The hotel has also invested in Fáilte Ireland’s carbon footprint tracker. Along with this they also have procedures in place to conserve energy management.

 

All delivery pallets are donated to Deise Men’s Shed and they are upcycled to make toys and furniture while they have also eliminated the use of single-use sauce packets in their bar area.

 

Eco-friendly chemicals are being used throughout the hotel.

 

The Granville Hotel is a customer of Frylight’s Circular Economy Programme.

 

Finally, the hotel has a lovely herb garden on the roof of the hotel for kitchen use.

An absolute treat!

I have to say it was an absolute treat for my husband and I, and two teenagers to stay in the Granville Hotel last week. It was luxurious, welcoming and relaxing. The food and service in the restaurant for both dinner and breakfast was of high quality, and also wonderful to hear that the ingredients are locally produced/sourced.

Everyone was very helpful, beginning with Joe on the door, who helped us bring our bikes into a designated area in the hotel overnight. We had just come from cycling the greenway, and were delighted with having a secure place to keep them.

The Hotel is perfectly situated for exploring Waterford city and doing a bit of retail therapy.

We will definitely return again soon.
