There’s bound to be a few knobs of cheese left in the fridge after the festive season. You can use them for a tasty bake of Macaroni Cheese. It’s perfect January food – sustaining and flavourful for a winter evening. This recipe uses Parmesan, but you can use any cheese you wish, preferably a nice Irish farmhouse cheese which will make this taste all the better. Easy to make after work, and if there are kids in the house, they will love it also. Give it a shot tonight.
