BAKING YOUR WAY TO CHRISTMAS

Our facebook post for today asks when does Christmas baking start in your house. For some of our Good Food Ireland Approved provider bakers, it started at the end of summer, with the first of the Christmas cakes and puddings being made and given time to mature. Most of us mere mortals aren’t quite that organised! It’s still not too late to make a pudding. Try this recipe from the Noel Enright, Sous Chef at The Malton Hotel in Killarney. Designed to be made and eaten straightaway and still tastes great. Light fruit cakes bedecked with glace fruits and whole shelled nuts make a good fast alternative to the traditional matured dark fruit cake. These can be made now and left in the larder till Christmas.  MInce pies can also be in avance, then left unbaked and frozen to cook  as required. Home baked biscuits and cookies make great gifts. Get your apron on and knock out a few for your nearest and dearest! Happy Christmas baking one and all….
