EASTER MONDAY LEFTOVERS


We hope you had a good weekend so far, and that the Easter bunny was generous yesterday,  in delivering a heap of chocolate eggs and other goodies for your delectation! Spring lamb was the order of the day for Easter Sunday lunch. We hope you enjoyed yours! If you have any left, here’s a little idea as to what to do with it.

Shred any cooked leftover meat finely.  Shake over soy sauce and a pinch of dried chillies. Season.

Shallow fry in hot oil till the shreds are crispy – you may have to do this in batches so as not to overcrowd the pan.

Drain on kitchen paper and keep warm while you fry the remaining batches.

Use to stuff warmed tortillas, with salad  and sweet chilli sauce (and/or mint sauce if you have some left over) as a dressing. Roll into wraps.

Yummy fist food for a relaxing Monday off!
