After the Spring Equinox which took place on the day of the eclipse last Friday 20th March, and the clocks going forward this coming weekend, we are all gearing up for a holiday over the long Easter weekend.  Sunday April 5th will see much chocolate consumed, as Easter Egg hunts take place and chocolate eggs are cracked all over the land. Lamb is the traditional meat of the celebration, roasted to perfection and served with a sauce made from new season mint leaves.
