Now the guys have secured a ten year deal to supply beef, lamb, wild game – and, wait for it! – wallaby, from the unique surroundings of Lambay Island. But seriously folks, all the meat from this island is unique in flavour, naturally salted from grazing on island pasture and plenty of fresh sea air. Back at base in Rathcoole, Lambay Island beef is traditionally dry aged by hanging to ensure depth of flavour, succulence and tenderness througout.
