Farm to Fork


Pat and Miriam Mulcahy run the fabulous Ballinwillin House and Farm in Mitchelstown, Co. Cork. Ballinwillin is a Good Food Ireland Culinary Accommodation Provider farmhouse on a working farm, and Pat is a producer of some fine meats.  The free range pig herd here is made up of rare breeds including Irish Grazers and Iron Age Pigs which date back to earliest times in Ireland,  Saddleback and Gloucestershire Old Spots are also in the herd, plus  Wild Boar,  which roams freely on the land at Ballinwillin. All these provide meat with moist succulence and a good smattering of fat to add moisture and flavour during cooking. A majestic herd of Hungarian Red deer produces dark, rich and intensely flavoured venison with it’s characteristic gamey taste. Pat farms Kerry cows for great beef, and tender and juicy meadow lamb. Pat uses his venison and boar meats for a wonderful array of salamis and sausages as well as fresh joints and cuts, available at the farm shop and the Ballinwillin online shop. Beef, lamb and pork is also available from the farm shop, either fresh or frozen.
