FISHY FRIDAY

It’s tradition on Good Friday to hold back on the meat in favour of eating a light meal of fish instead. This has its basis in religion, when meat wasn’t eaten during Lent.  In Ireland, eating fish on Friday is a practice that has carried on into modern times, and a healthy one too, so it’s all good!. Dietary experts recommend three portions of fish a week,  for a healthy balanced diet. For tomorrow’s Good Friday fish dish, we have a simple but extremely tasty concoction from Burren Smokehouse. Birgitta Curtin uses her hot smoked salmon to make a fabulous pasta dish. Follow this link to find the recipe.. Tasty and quick to cook and assemble, it hits the spot we reckon. Enjoy.
