His Roast Belly of Pork on Dublin Coddle is fine old fashioned family food  – with the creative twist he puts onto everything at The Cellar Restaurant.  Of course you don’t have to make the presentation as flash as he does – but you will want to savour the perfectly balanced tastes. Dublin Coddle is a traditional dish, made from pork products – it’s the Capital’s version of Irish stew, dating back to a time when pork was way more available and economical to cook with than lamb for city families. For dessert,  try Sarah Baker’s Lemon Posset with Ginger Biscuits. This esteemed head lecturer and owner of Cloughjordan Cookery School at Cloughjordan House in Co. Tipperary will put you through your paces – even from a distance!
