Her creation epitomises the ethos and seasonal message of Good Food Ireland in one fabulous dessert. A home made meringue base, layered with whipped Wexford cream and lots of Wexford strawberries and raspberries, finished with a generous drizzle of Blackcurrant and Loganberry Coulis from Crossogue Preserves.
