‘Local’ is the buzzword for food. But how many of us can count the ingredients on our plates and say we know exactly where they come from and say who provided them and how they were produced? As winner of our Good Food Ireland Food Innovation award for 2013/14, for his commitment to sourcing, Kevin Aherne of Sage Restaurant and The Green Room Wine and Beer Hub in Midleton, Co. Cork, is a chef who knows for sure what he is cooking and serving his customers. We have long admired this man. His passion and commitment to the produce of his region has been on our radar since we first met him several years ago. During the time he has owned and run Sage, his producer circle has been whittled down to only the very best from within 12 miles of the restaurant kitchen. Kevin loves the food of his area, and the producers who supply it. He has grown in stature as one of Ireland’s top chefs most dedicated to providing a real ‘local’ food experience.
