SQUASH HOLDS COURT – Game on!


We have already spoken in this blog about the colours of autumn and how they are echoed in seasonal vegetables. Butternut Squash is one of those veggies. Golden skinned, amber fleshed and with a rich buttery, nutty taste. Butternut squash is extremely versatile. Add a few chunks to a meat or vegetarian curry. Roast smiley wedges in Irish rapeseed oil, Atlantic Sea Salt and freshly ground pepper, as an accompaniment to lamb or chicken.
