It’s a simple request in Cork.   First thing in the morning, Jenny Rose Clarke and her team at The Sandwich Stall in the English Market are like busy little bees, filling the early fresh delivery of Ryan’s Arbutus Breads with Cork artisan produce – charcuterie, cheeses, (including Toonsbridge Dairy products which Jenny Rose’s partner Toby Simmonds co-owns) smoked fish and other goodies. The counter is bursting with sandwiches of every description. By three o’clock in the afternoon, you’d be lucky to find a few crumbs left! The Sandwich Stall is extremely popular with workers, shoppers and visitors to the city. As they say, the clue is in the name  – these people are specialists when it comes to putting wonderful fillings between rolls, baguettes and the like, and the whole of Cork and it’s aunty knows it. Famous as it is for sarnies, there’s also a blackboard menu of a hot dish of the day and a soup of the day, plus a chill cabinet displaying an array of healthy and colourful salads. Everything can be eaten in or as a take out. If you’ve time to spare, perch yourself on a high stool and watch market happenings as you munch on your lunch.
