The Tannery Cooking School located on the Quay in the lovely coastal town of Dungarvan, Co. Waterford, offers its enthusiatic students a chance to learn some great recipes and tips from well known and experienced Chef Paul Flynn and his team. Paul and his roster of guest tutors run fun and informative weekend courses for anyone with an interest in cooking. Situated in a chic custom designed set of rooms designed by Paul and Máire, the cookery school is the perfect learning atmosphere for budding foodies. Don't worry about your cooking skills, Paul's down to earth approach and encouragement will keep you at ease.

Winter in Italy with Anita Thoma – 24 October 2015 – 10.00 to 16.30
Have a passion and love for Italian Cooking? The Tannery are delighted to welcome Anita Thoma, ex ll Primo Rasturant, Dublin for a full day practical and will be cooking robust traditional and not so tradional Italian cuisine, that will go down a treat with your family and friends. La Convivialita is the word Italians use to describe how they feel about food and this is the perfect time of year to share that sentiment. At the heart of cooking is the pleasure of sharing and conviviality and no-one does this better than the Italians. Why not make a night of it and stay in the Tannery Townhouse.
Cook Your Lunch – 07 November 2015 – 10.00 to 14.00
Cook your lunch under Paul Flynn’s watchful eye. This is a short morning practical where you will improve your knife skills and learn new dishes to add you your repetoire. With guidence through the morning from Paul and tips on how to make the most of your skills, this will be a very valuable few hours cooking currency.
Christmas in the Kitchen – 21 November 2015 -10.00 to 16.00
Cooking for Christmas doesn’t just mean the traditional roast turkey. Why not shake things up a bit with this cookery course to make sure your Christmas spread is the envy of all your friends and family over the festive season. Learn how to cook Paul’s favourite seasonal recipes, perfect for entertaining and also for your own family. This is a mixed demo and practical course followed by lunch.
A Christmas Brunch – 28 November 2015 – 11.00 to 14.00
A festive Christmas brunch morning with a demo on seasonal dishes that will see you right through Christmas and into the New Year. These dishes can be adapted for cosy suppers at home with friends and even for neighbours calling for drinks on Christmas morning. Followed by brunch with a glass of prosecco, this is the perfect pre-Christmas get together with friends.
