WEDNESDAY DILEMMA


The middle of the week always throws up the ‘what shall we eat for dinner this evening?’ conundrum. After Monday evening’s traditional ‘leftovers’ supper and Tuesday’s creative efforts with the weekend’s remaining  fresh ingredients – Wednesday is the day when people tend to do the least fresh food shopping. Halfway to the weekend, but not quite there yet – in many households the big food shop won’t be done till then.  Everyday cooks can fall a bit flat when Wednesday night turns up and the family still needs to be fed. So we have a perfect and easy recipe for you to create at home this evening. This delicious Thai Seasonal Vegetable Curry is just that – a mix of whatever veggies you fancy in season. The list of ingredients here is only a guideline – feel free to add or remove as you wish. Nutritionally, it’s wise to have a veggie based dish at least once a week –  and this delicious and flavoursome curry certainly makes short work of introducing that concept to the family!
