FORGING AHEAD


Look at this beautiful bowl of salad. At The Forge Bar and Eatery in Moycullen, Co. Galway, salad has taken a new turn in the last few weeks. A new local grower has been specially sourced to supply seasonal Irish vegetables, including this mix of baby salad leaves which are full of taste and texture. Married with chunky cucumber pickled in The Forge kitchen, and some piquant red onion rings and Irish tomatoes, it makes a flavoursome accompaniment to any of the dishes on The Forge menu. Anne Marie Kelly and her Forge co-owners and chefs Michael Corcoran and Richard Casburn, were very excited to give us a taste of the new salad mix, and we must say it was as tasty as it was photogenic! We’re looking forward to seeing what the next seasonal twist of vegetable accompaniments at the Forge will be, courtesy of the small holder in nearby Oughterard who grows without the use of chemicals. No wonder the salad tastes so good!
