Dining

The Red Bank Restaurant takes inspiration from the local area, this is keenly felt in their food & drink offering. When viewing the menu, you’ll see a wealth of local producers and locations given credit in the dishes. The food is complemented by a fantastic drinks offering, which includes an exciting menu of locally inspired cocktails. This further re-enforces a great sense of place when dining at the Red Bank Restaurant. Open Thursdays through to Sunday, The Red Bank Restaurant is a popular dining spot for locals and visitors to Carrick-On-Shannon.

When visiting The Red Bank Restaurant you’ll immediately feel at ease with a bright airy dining room that has loads of natural light and plenty of space to enjoy your meal. There are two main menus to choose from which include a Table D’HĂ´te Menu and an A La Carte Menu. When we visited we ordered off the A La Carte menu and were delighted with the variety and choice that was provided. More so, the menu itself was animated with a wealth of local produce proudly displayed on each dish where relevant. These local delicacies include Gannon’s Chicken, Leitrim Hill Goats Cheese, Clew Bay Mussels, and Brogan’s Farm Beef. This very much underlines the restaurant’s commitment to using local ingredients and the close relationship they have with their local suppliers. More so by name-checking them on the menu, it’s giving these dedicated producers recognition for the quality food they produce.

During our visit and never able to resist ordering some delicious shellfish, we had the pleasure of sampling the Pan Seared Scallops and Tempura Prawn starter. The scallops and prawns were a great combination and both were cooked to perfection! Moreover, the main ingredients are complemented by pickled mushrooms, pea pureé and the cherry on top was the addition of some crispy pancetta that added that hint of saltiness. All these elements together provided a riot of great flavours seamlessly blended together.

For the mains, we stuck to the theme of fish and seafood and chose the Seared Atlantic Cod Fillet. Once again the fillet was perfectly cooked and the accompanying ingredients included some tasty chorizo and a tomato salsa that helped to jazz up the lovely fillet of fish. The culinary team have created some very exciting dishes that elevate the local produce with some carefully selected accompaniments.

For those looking for something vegan or vegetarian, you’ll be delighted to see a great selection of dishes that are far from boring and are full of tasty flavours. These include a Tofu and Black Bean Stir Fry, Carrot Fritters and a Cauliflower and Sweet Potato Curry.

For something sweet to round off your meal, the menu at The Red Bank Restaurant features some lovely desserts. These include favourites such as a seasonal crumble and a hard to resist sticky toffee pudding among plenty of other mouthwatering options!

For those who would like to hold a special event or party, the Red Bank Restaurant also has dedicated private dining spaces that can hold up to 20 people. This would be the perfect place to celebrate an upcoming birthday or anniversary.
