New Barton Grill Restaurant Opens at The K Club

Immediate Release - March 2026

Barton Grill, a new restaurant bringing a fresh perspective to casual fine dining, has opened at The K Club with a new Head Chef at the helm.

Blending the refinement of a high-end culinary experience with an effortlessly relaxed and welcoming atmosphere, Barton Grill has been created as a destination for hotel guests, keen golfers, and local diners seeking classic favourites elevated with contemporary Irish finesse.

At the heart of the kitchen is a commitment to exceptional Irish produce, sourced from trusted suppliers across the country. The ingredient-led menu reflects the combined experience and distinctive flair of Executive Chef Gary O’Hanlon and newly appointed Head Chef Adam Leahy. Having worked alongside O’Hanlon for the past decade, Leahy now steps confidently into his next chapter, bringing depth, continuity and a quietly assured creativity to the restaurant.

Rooted in classical technique and inspired by The K Club’s French heritage, the cooking balances comfort and sophistication, finished with a modern Irish touch. Signature dishes such as Beef Wellington, tableside Dover Sole, freshly-shucked Oysters and juicy Scallops celebrate the grill tradition, while timeless favourites including Dublin Bay Prawn Cocktail and French Onion Soup offer reassuring familiarity.

Speaking about the opening, Head Chef Adam Leahy said:

Barton Grill is about celebrating exceptional Irish ingredients while respecting the classical foundations that have always inspired us. Having worked alongside Gary for many years, it’s incredibly special to now lead this next chapter. We want guests to feel relaxed and at ease, enjoying food that is refined but never fussy, and dishes that are rooted in tradition yet full of personality.”

The drinks experience forms a central part of Barton Grill. Guests enter through a softly illuminated wine wall lined with bottles from The K Club’s own cellar — a quiet tribute to the Barton family, one of the longest-established Irish families in the Bordeaux wine trade. An extensive and carefully curated wine list is complemented by the opportunity to enjoy a pre-dinner tasting in the hotel’s historic cellar, guided by the hotel’s knowledgeable sommeliers, led by Lisa O’Doherty. A tempting cocktail menu completes the offering, featuring chic classics alongside handcrafted K Club signatures.

Barton Grill’s visual identity further reflects the restaurant’s strong sense of place. The logo draws inspiration from the native Straffan snowdrop, discovered on the estate in the 1850s, symbolising a deep connection to the landscape and heritage of The K Club. The inclusion of grapes subtly references the Barton family’s historic association with wine, while the iconic 1830s Straffan House, illustrated by Tara Fetherston, anchors the brand in its architectural and familial history.

This connection to place continues throughout the restaurant in a curated collection of 20 original artworks, commissioned by The K Club’s owner Michael Fetherston from Dublin-based artist Jean Lowndes. Inspired by features of the grounds and the Barton family story, the collection adds another layer of depth to the dining experience.

With its blend of exceptional food, considered design and rich heritage, Barton Grill represents a confident new chapter for dining at The K Club.

Quotes from Design Team in Millimetre Design

“Our vision for the Barton Grill was to create a dining space that feels colourful and alive, yet deeply rooted in the timeless warmth of The K Club. A space that would feel atmospheric yet inviting.

Rich mahogany-toned joinery with warm brass detailing establishes a strong sense of craftsmanship and heritage, while softly painted panelled walls, sweeping drapery, and abundant natural light introduce a calm and graceful softness. This interplay of depth and light creates a layered environment that feels luxurious without excess.

Throughout the restaurant, sculptural lighting, curved architectural forms, and carefully composed seating arrangements bring rhythm, atmosphere, and a sense of occasion to the space. Jewel-toned columns, textured upholstery, and lush planting add richness and vibrancy, whilst bespoke furnishings reinforce the restaurant’s poised, polished identity.

A defining feature of the refurbishment is the intelligent lighting control system, carefully conceived to elevate the dining experience across the day. Fully automated, the system seamlessly adjusts both brightness and colour temperature in response to the changing rhythms of service, guiding the atmosphere from morning through to evening.

In the morning, a cooler, brighter light energises the space, lending a crisp, fresh quality that complements breakfast service. As the day transitions into lunch, the lighting softens in intensity and shifts to a more neutral tone, maintaining clarity while encouraging a slower, more relaxed pace.

By evening, the scheme deepens into a warm, ambient glow, creating an intimate and refined setting aligned with the client’s vision. This subtle progression not only enhances the material palette of the interior but also plays a pivotal role in shaping the emotional experience of guests throughout the day.

Another notable feature of the concept is the wine display at the entrance which acts as both a visual connection to the Barton legacy and an expression of connoisseurship, reinforcing The Barton Grill’s sense of ritual, quality, and sophistication. Together, these elements shape an interior that is deeply rooted in classic elegance yet interpreted with a fresh, modern sensibility.

The restaurant feels distinctive, refined, and memorable — a destination within The K Club that reflects its prestige whilst offering guests a warm, immersive, and beautifully curated dining experience.

Throughout, the intention was to create a restaurant that feels timeless rather than formal; somewhere guests can settle into, enjoy, and remember.

We have created a stage for unforgettable moments, where classic tradition and contemporary spirit dance together.”
