The Crolly Distillery is the vision of a group of friends who shared one ambition – to bring whiskey making back to Donegal.
At the heart of the project are local men including Kieran Davis, Conor McMenamin and Joe Devenney, each of whom grew up surrounded by the traditions, language and resilience of the Gaeltacht. Their paths led them in different directions, yet they were united by a determination to restore the old stone distillery in Crolly and give it a new purpose.
Together, they set about reviving the building, once a proud centre of industry dating back to 1901, and breathing life into its walls once more. Their goal was not only to produce exceptional Irish whiskey but to create something that truly belonged to the place they called home. Guided by a shared respect for heritage and a forward-looking spirit, the founders have shaped a distillery where every cask tells a story of perseverance, pride and community.
For them, whiskey making is more than craft – it is an act of guardianship. Local water, carefully sourced grain and traditional distilling techniques come together under their watch to ensure every drop carries the essence of Donegal. In each glass lies not only the flavour of the land but also the dedication of those who dreamed of bringing it back.
To meet the makers of The Crolly Distillery is to meet people deeply rooted in their community – men who have turned vision into reality, and in doing so, restored a proud tradition to Donegal’s shores.
CRAFTING THE WHISKEY AT THE CROLLY DISTILLERY
Whiskey Production
At The Crolly Distillery, whiskey making is both an art and a revival of tradition. The distillery focuses on producing premium single malt Irish whiskey, crafted with care in the heart of Donegal’s Gaeltacht. Using pure local water from the surrounding hills and the finest Irish barley, every step of production honours time-honoured methods while embracing modern precision. Triple distillation in copper pot stills ensures a spirit of exceptional smoothness and balance, while careful attention to detail allows the whiskey’s character to shine through.
Maturation takes place in a unique environment – within the historic stone walls of the restored distillery. Here, oak casks breathe in the wild Atlantic air, and the steady Donegal climate shapes the whiskey’s depth and complexity over time. Each cask develops its own personality, resulting in a spirit that is rich, layered and unmistakably rooted in its place of origin.
The whiskeys of Crolly are more than spirits – they are living expressions of Donegal’s resilience, culture and landscape. Every bottle tells a story of craft, heritage and a community brought together by a shared passion for revival.
