Culinary teams work creatively to repurpose surplus ingredients – croissants become bread and butter pudding for staff, carrot tops are transformed into pesto, fruit and vegetable trimmings into purees and smoothies and leftover chocolate into sauces and brownies. Even pork and chicken skin are reimagined into bar snacks or seasonings, ensuring nothing goes to waste.

 

Beyond the kitchen, sustainability is woven into the fabric of the estate. The Lodge works closely with local farmers and suppliers to champion seasonal, homegrown produce and reduce food miles.
