Have you ever fancied making your own cheese? The process of setting milk to form curds and pressing them into a cheese mould for maturation is an ancient one. Ireland’s cheesemakers have it down to a fine art, producing many cheeses with diversity in milk, styles and taste. But how easy is it, to make a little bit of cheese at home for your own enjoyment?  A new found hobby to while away the winter hours when the rain pelts and the wind blows. At the end of it, a gorgeously flavoursome piece of home made excellence to enjoy with crackers and a glass of wine beside a warm fire.Expert cheesemaker Helen Finnegan of Knockdrinna cheese has been teaching cheese making courses all through summer. Her last class runs on 28th September. Helen will teach how to make and taste really good cheese. She should know – her small cheese making factory on the family farm produces award winning specimens consistently! Enjoy the cheesemaking session, a tour of her facilities , and tea/coffee and lunch with an iconic Irish food producer. If you aren’t lucky enough to get a place on this last class – you can still enjoy a pre-bookable cheesemaking day as part of a group of eight friends, family or other interested amateur foodies looking to extend their skills. Cookery school and catering degree students and professional cooks will also gain from the day. Watch with wonder at how milk turns into beautiful cheese, with all it’s subtle nuances of flavour. It’s one of the genius processes of natural food making!
