Begin your journey in Dungarvan, Waterford, where you will stay at the famous Paul Flynn’s Tannery. This is a boutique townhouse, one of Dungarvan’s old residential buildings, very close to the pretty harbour area and convenient for a brisk refreshing stroll on the promenade. The house’s period lines have been followed to restore its gentile presence, original features like the big sash windows and generously proportioned rooms are par for the course, but as always with the Flynn’s with a contemporary twist. Breathe in the fresh salt air of this waterside quaint town, and have a wander to see its beautiful waterfront and cute winding streets before dinner.

Dinner is a special affair at the Tannery Restaurant. Here you will see contemporary Irish cuisine, cooked with French flair. Irish produce is first and foremost – Paul Flynn’s style is modern Irish. You may find some traditional cuts and ideas here, but be sure they will be given the Flynn twist on the plate. That the Tannery is one of Ireland’s leading restaurants is unarguable. It’s a place to enjoy this TV and celebrity chef’s style of contemporary Irish cooking based on good local produce.

Retire, only to wake to more good food. Delight over breakfast in bed, your room homes a fridge loaded with fruit compotes, Irish yoghurts, cereals, fresh juices, coffees and tea. You can also avail of a full cooked menu, which is just as splendid as everything else served in this food haven. When you’ve eaten your fill, it’s time to travel to to Cappoquin to taste a Waterford Delicacy. Next, it’s on to Sage Café for a light bite of lunch in Youghal. Enjoy seaside views, a light stroll and then sit down for the freshest produce in this cosy café, that has good food right at its heart. Once you’ve got your fill of seaside antics in this picturesque little town, it’s off to Ardmore for a little history. Visit the round tower at Ardmore and an ancient little church, bask in this piece of living history. Before enjoying a hearty home cooked meal at White Horses Restaurant. This restaurant takes its sea side tradition seriously, serving up warming dishes to satisfy the sea air encouraged hunger.

Next on the menu is the Cliff House Hotel. There can’t be many more stunning places to put a luxury hotel than this, built into the cliffs, which embrace the bay at Ardmore, Co Waterford. The Cliff House is stylish, chic and oh so smart. From the moment you step inside, you’ll feel its special seaside tranquillity seeping into your pores. Wake to a shower overlooking the bay in a bathroom with a gorgeous view, and then head for a breakfast you won’t be forgetting in a hurry.
