Hayfield Manor has recently welcomed Stephen Sullivan as new Executive Chef. This bright eyed young fellow has a heap of experience behind him, including a spell with Executive Chef Ed Cooney of The Merrion Hotel. This is where he learned all about the Good Food Ireland ethos, and the appreciation of local produce. Relocated now to Cork and a big promotion, at just 29 years of age, he is one of the youngest Executive Chefs in Ireland. Delighted to be at Hayfield Manor Hotel in Cork city, one of the country’s top five star destinations, Stephen is making the most of County Cork’s wonderful local produce. This dish, on the current dinner menu at fine dining restaurant Orchids at Hayfield Manor, has Ballinwillin Farm Wild Boar as the centrepiece, with Pak Choi, ginger puree, caramelised apple and a wild boar dumpling. Looks delicious. Expect Skeaghanore duck also on the menu, with lots of Cork fish and shellfish in season.
