Kelly’s Resort Hotel is celebrating a momentous year in 2025, welcoming Grace Kelly, the youngest daughter of Bill Kelly, back to the family business.

 

Good Food Ireland® is delighted to share exciting news from its esteemed member, Kelly’s Resort Hotel in Rosslare, Co. Wexford. 2025 marks a year of significant growth and innovation for the renowned hotel, including a new generation joining the family business and exciting developments in its culinary offerings.

 

Grace Kelly, the youngest daughter of Bill Kelly, has returned to the family business after completing a master’s in hospitality management with a specialisation in Food and Beverage at the prestigious École Hôtelière de Lausanne in Switzerland. Her expertise will be invaluable as she joins the team to further enhance the guest experience and drive future growth, particularly within the culinary realm.

 

Kelly’s Resort Hotel, known for its exceptional dining experiences, will continue to innovate and refine its farm-to-table dining philosophy. The hotel prides itself on showcasing the finest ingredients sourced from its own Kitchen Garden and will be announcing exciting collaborations with renowned chefs throughout the year. These collaborations will focus on quality, sustainability and creating a memorable culinary journey for guests.

 

Executive Chef Philip Brazil

 

A key development in the kitchen sees Philip Brazil taking the helm as Executive Chef. Succeeding Eugene Callaghan after his impressive 15-year tenure, Philip brings a wealth of experience and innovation, honed at esteemed establishments such as The K Club, Sheen Falls, and Castle Leslie, as well as international experience in the Middle East. His leadership promises to elevate Kelly’s cuisine to new heights.
