BOXTY ON THE GRIDDLE


Boxty on the griddle/Boxty on the pan/If you can’t make Boxty/You’ll never get a man! This was the rhyme handed down from mother to daughter for generations in the northern counties of Ireland, where they can make Boxty in their sleep! This griddle cooked potato dish is a mix between a potato cake and potato bread. A mix of potatoes, flour and bread soda which binds together and cooks to form little golden brown rounds of deliciousness. A real Irish treat for the coming long St.Patrick’s weekend.
