Ingredients
A light, floral summer dessert with a soft, marbled finish
- 450g fresh raspberries
- 600ml double cream, softly whipped (pillow-like, not stiff)
- Irish Sisters Raspberry and Rose Cordial (1 bottle)
- 1 tbsp icing sugar
- Pink rose petals
- Fresh mint leaves
- Biscuits or shortbread for scooping
Method
- Reserve a few raspberries, mint leaves and rose petals for decoration.
- Lightly mash the remaining raspberries, keeping some texture.
- Stir in 1 tablespoon of Irish Sisters Raspberry and Rose Cordial.
- Spoon a layer of the raspberry mixture into the base of a serving glass or bowl.
- Gently fold the whipped cream into the remaining raspberries with the icing sugar.
- Keep the mixture lightly marbled rather than fully combined.
- Spoon on top of the base layer.
- Drizzle with a little more cordial and decorate with reserved fruit, mint and petals.
- Serve with biscuits for scooping.
