LunchPut grated potatoes, flour, bread soda, egg, salt and pepper into a bowl. Mix well, until all ingredients are blended together. Use as soon as mixture is mixed. Do not allow to stand as the mixture can discolour. Heat a little oil on a frying pan, when hot drop spoonfuls of mixture onto pan and fry for about 3 to 4 minutes, then turn and repeat on the other side. Boxty should be golden brown when cooked. Ideally served hot.

StartersMethod for Peas: Cook the peas in boiling salted water for 2 minutes until tender. Drain and then put them into a food processor to puree them until smooth, adding some of the cooking water if it’s too thick. Pass the purée through a fine sieve into a bowl, season well and add some sugar to taste. Horseradish crème fraîche: Mix the prepared horseradish and the crème fraîche together in a bowl. Season to taste. Serve the salmon as illustrated with the pea purée and horseradish crème fraîche. We also like to serve this dish with diced cooked beetroot, sweet corn and fresh peas.
